Snail Mail

So, my friend Lori and her daughter, Elizabeth were here for a girls day luncheon about a month ago. One of the many things we did that wonderful day was peruse Elizabeth's blog TOILE (please click on link). When we were wandering around her site, she suggested I start a blog of my own (being the sweet girl that she is, she was either being nice or she was trying to stop me from drooling all over her about her lovely blog). So, that day and that girl were my original inspiration to start this addicting habit of blogging...now I'm stuck and I can't stop!
Anyway, I frequently check TOILE to see the musings of the day and today her blog was about "getting down and dirty" based on another blogspot challenge HERE of getting down low to the ground to capture images from a different angle.
Well it just so happens I was doing that very thing last weekend. These are not award winning pics but nonetheless they were still fun to capture. In the bottom pic, that cute little green plant is about as big around as a pencil.

A patient little patient...

Even though HIPPA guidelines prohibit me from discussing or talking about a patient in any way, there are those times it is OK to bend the rules a little and this is one of those times...
I don't have just a "job" per se and sometimes it can actually be fun considering the fact its what I do for a living: working in a very busy Ophthalmology practice. There are days the "train wreck" happens the moment I walk in the door. 
Most of the time I work with some very difficult medical ocular emergencies on a daily basis (nail-gun injury or champagne cork to an eye is considered an emergency in case you're wondering).
Then there are those days the sweetest little patients come through my door and into my practice.

Yesterday was one of those days...
Meet little Gus...
he is an adorable 10 week old English Bulldog that stole my heart!

It just goes to show you, there is a little sweetness in everyday, you just have to look for it and see it!

At the end of the day...

So when I get home, the first thing I do is don my warmest pair of sweats. You know the kind that makes you look like a "schlumpadink" not the froo-froo ones with the pretty picture on the front but the really baggy, saggy comfy ones.
Then I sit down to chat and write and cuddle...

Quiche anyone?

OK, since posting my original photo of my Easter Quiche, many of you asked for the recipe. Thanks for your patience, I was waiting for my new scanner to arrive but once I got it, I didn't like the way my original recipe copied! Oh well such as life...so I'm sending you straight to the link for the crust I use, but the filling is my own concoction.

Note: for the Quiche pictured, I divided my dough for two fluted Quiche pans instead of my 9x13 casserole dish. Freezes well.


 


Here's the Crust recipe I like to use from my favorite cooking site; "Taste of Home".

FILLING:
3 cups ham, diced (Honey baked is best)
1 lb. maple smoked bacon, cooked and crumbled
10-12 eggs beaten
2-3 cups milk
1 1/2 lbs. Swiss cheese, shredded
1/4-1/2 lbs. mushrooms thinly sliced
1 sm. bunch scallions, (green ends only), finely chopped
Red bell pepper, finely diced
(for vegetarian option, omit meats)

Pour above ingredients into one 9x13 casserole dish (see above) or pour into two (small) prepared fluted Quiche pans. Bake at 350* for 35-45 mins or until set. It may be a bit wiggly when you first take out but it cooks as it cools.

If you don't want the challenge of making crust from scratch, you can use the cheater crusts' (refrigerated section) and call it good. These work in the fluted pans as well as a 9x13 (you just smoosh the edges together).

Garnish with fresh (chemical free) flowers, basil, or mint sprigs.

The Running B...

The Beaudry home, the Running B Ranch...so named because Arnold runs.
At 78 years old, he's still running.
He runs to the shop, he runs to the barn, he runs up the hill, he runs down the hill, he runs through the field, then runs after the goats, Thelma and Louise.
If there's a place to run on the Running B, he does...
What he really loves to run...is the Running B Ranch.
